Everyone asks why the lights are on in the vineyard at 2 a.m. Here's the honest answer: cold grapes make better wine.

Cold fruit, slow start

Pick a grape at 55°F and it holds its acid, its aroma, and its composure. Pick it at 90°F and it starts fermenting in the bin, before it ever sees a tank. Night picking keeps the whole thing cold and calm.

The crew hates it, mostly

Headlamps, thermoses, and a lot of jokes about vampires. But there's a strange quiet to a night harvest — you can hear the birds wake up as you finish. It's the best shift on the estate.
