What the wood does

Oak adds structure, spice, and a slow breath of oxygen through the grain. Too little and the wine is flat; too much and it's a wood cocktail. We aim for the middle, and check every month.

The waiting is the point

There's no shortcut for a wine that's been given time. The barrel teaches you patience the way the vine teaches you weather — slowly, and not on your schedule.
