Harvest is a two-week sprint that we run at night. Cold grapes hold their acid and their aroma; warm grapes don't wait.
How we pick
start around 2 a.m., headlamps on picking by hand, whole clusters intact brix 21–24°, checked in the field target the morning the sugars peak
Why night matters
Fruit picked at 55°F goes into the tank still cold. Fermentation starts slow and clean — and slow, clean ferments make better wine.
